Happy Hump Day foodies!!!! This week we are bringing you a very exciting, slightly more advanced recipe….HOMEMADE GNOCCHI! Gnocchi has always been one of our favorite types of pasta, so being able to make it at home has been truly life changing. And what makes it even better is that it can be enjoyed with any one of our TCDC pasta sauces :)
*Shoutout to @allrecipes for the recipe inspo - we doubled their recipe, so this one we are sharing with you should be enough for 4 servings*.
What will I need?
4 potatoes
4 cups of flour
2 eggs
1 teaspoon of salt
What do I do?
1) Bring a large pot of salted water to a boil. While the water is boiling, rinse and dry potatoes.
2) Add potatoes to the pot, and let them cook for ~20 minutes.
3) Once done cooking, transfer the potatoes to a large bowl filled with ice - you will leave them on ice for ~15 minutes, until they are cool.
4) Once cooled, peel the potatoes to remove the skins completely.
5) Grate or mash the peeled potatoes.
6) In a big bowl, combine the mashed potatoes and both eggs. Once the eggs are completely mixed in, add the salt and the flour (add the flour in little by little).
7) Knead the dough mixture until it can be formed into a solid ball shape.
8) Cut off or pull apart small portions of the dough, and shape them into long rope-like pieces.
9) Spread some extra flour on your counter, and cut each rope of dough into small (~1/2 inch) pieces.
10) Bring another large pot of salted water to a boil. Add the gnocchi, and cook until the pieces start to float to the top of the water.
11) Drain the gnocchi, and serve with the TCDC pasta sauce of your choice!!!! ENJOY!
