This recipe is shrimply delicious, and perfect for adding a little spice to your diet while still consuming your daily dose of cheese :)
What will I need?
2 cups of pasta - we used penne
Cajun Seasoning - we used store bought McCormick Gourmet
1 tbsp of olive oil
1 tbsp of butter
15 oz. (or just about 2 cups) diced tomatoes - we used ones with basil, garlic, and oregano
2 cups of chicken broth
2 oz. (or 1/4 cup) cream cheese
1 yellow onion, diced
3 scallions, chopped
Shrimp - we used precooked, frozen shrimp
1/3 cup of parmesan cheese
1/4 cup of heavy cream
What do I do?
1) If shrimp is frozen, as ours was, thaw the shrimp - you can do this easily and quickly by removing the number of shrimp you want from the freezer, placing them in a colander, and running them under cold water for ~5 minutes.
2) Add the olive oil and butter to a pan over medium-high heat, until the butter is fully melted and foamy.
3) Add the desired number of shrimp to the pan, then sprinkle cajun seasoning over the shrimp. Toss them around a little until the seasoning coats the shrimp.
4) Add in the diced yellow onion, and stir everything around for a minute or so until the onion begins to soften.
5) Next, add in the pasta, the diced tomatoes, the chicken broth, and some more of the cajun seasoning. Stir it all up until everything is combined.
6) Cover the pan, and allow the broth to come to a boil. Once it’s reached a boil, lower the heat to medium-low, and let everything simmer for ~10 minutes, stirring occasionally.
7) Finally, add the cream cheese, little by little, and stir until it has melted and mixed into the sauce. Then add the heavy cream and parmesan cheese, and continue to stir until everything is combined.
8) Top everything off with the sliced scallions, and ENJOY!!!!
