We’re back, and this week it’s Muffin Monday!!!! This is not meant to take away from the beloved #MacandCheeseMonday, but rather, to enhance it. We’ve been making these delicious chocolate chip banana muffins for years now, and they are always a hit. Now it’s time for you to give them a go :)
What will I need?
3 overripe bananas
1.5 cups of flour
1/3 cup (5 tablespoons + 1 teaspoon) of butter
1 egg
3/4 cup of sugar
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon vanilla extract
1 cup (or more…) of chocolate chips
What do I do?
1) Preheat oven to 350 degrees. In a large bowl, combine the salt, flour, baking soda, and baking powder. Set bowl aside.
2) Mix together the bananas, sugar, vanilla extract, egg, and butter (this will be easiest if you have an electric mixer - but if you don’t, you can do this using a whisk).
3) Combine the flour mixture with the banana mixture, then add in those choco chips!!!! Stir until everything is fully combined.
4) Add the mix by spoonfuls to a muffin pan lined with baking cups, and add more choco chips to the top of each muffin.
5) Bake for 15-20 minutes. Remove, let cool, and ENJOY!!!!
***TIP: If you want to make the banana bread version of this, just add the mix to a loaf pan and bake it for 40-50 minutes***
